Cheat Night Paleo Recipes from 9.30.13

Thank you to everyone who came out for our first official CFPB Cheat Night. It was a blast with lots of good people, LOTs of good food and drinks, and as always, competitive games of beer pong. We look forward to the next one!

I will post as many recipes as possible (AMRAP) for the yummy dishes we got to enjoy.

Chocolate Blueberry Banana Muffins by Trish – Using Nikki’s Coconut Butter

Banana, Blueberry and Chocolate muffins:

5 eggs,  2 ripe bananas,

1/4 cup of Nikki’s coconut butter (vanilla cake batter), 1/3 cup coconut flour ,1/4 tsp baking soda

3 tsp of organic honey, 1/2 cup blueberries,

1 tsp of cinnamon, 1/4 cup enjoy life chocolate chips

Preheat over to 375. Mix wet ingredients together and then add dry ingredients slowly. Blend well then add the blueberries and chocolate chips into the batter. Place batter into muffin pan and cook for 18 to 20 mins at 375.
